🍎 Applewiches 🍎

—Makes 4 snacks—

INGREDIENTS: 

2	large apples
1	lemon
4	tablespoons peanut, tree nut, or seed butter
4	tablespoons granola

DIRECTIONS:

1. Use an apple corer or melon baller to remove the apple cores. Cut ½ inch off of the top and bottom of the apples. Cut the apples crosswise into ½-inch-thick slices. They will look like bagels with holes in the center.

2. Rub the cut sides of the lemon over both sides of the apples to prevent browning. Spread peanut butter on 4 apple slices. Sprinkle the granola on top. Cover with the remaining apple slices.

I knew I had to make a change.  So in mid-January, I FINALLY made the commitment to myself to take care of ME so I could set a healthy example for my children.  Like many moms out there, all the excuses I made up for not having time to eat right or exercise regularly caught up with me, and I was so uncomfortable in my skin. I made a written commitment to myself to pray daily, make healthier food choices , and get in at least 30 minutes of exercise a day.  This time was for ME. To focus on my goals as a wife, a mother and a 30- something woman. The journey has been a struggle because I loved my excuses.  But I stuck to my commitment to get healthy and…

But the biggest reward — by changing my poor habits and committing to be a better version of me, my hubby and kids have adopted the lifestyle too, and our relationships are stronger and healthier!
